Here's a yummy low-carb, low-sugar, good-for-you treat for a hot spring (as has been the case here in SC recently) or summer day ... Enjoy!!
Lemon Berry Freeze:
Ingredients:
2 c. fresh blueberries OR 2 c. frozen blueberries (could also use other berries, if you don't mind the seeds =])
2 tsp. lemon juice
1/4 c. water
Splenda or Stevia, to taste
Preparation:
-- Puree all ingredients in blender or food processor
-- Transfer to 2 small serving dishes
-- Cover and freeze for 3-4 hours
-- Top with a small spoonful of whipped cream to serve
