Coleslaw Alternative
I just LOVE Trader Joe's ... think I find something new and 'good-for-you' every time I shop there for groceries. Most recently, I found a lovely 8-veggie mix (broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish & celery) all chopped and ready for me to add to whatever dish I desired.

A few days later, decided to try it in my chili instead of corn-bread ... I added about 1 cup (which, afterwards, I felt was too much ... next time will do maybe 1/2 cup) and it was actually pretty yummy. Another couple days after that experienment, I sauteed a couple handfuls with my leftover chinese take-out ... again, delish!!! Then, this past Sunday, I made myself a veggie burger for lunch and wanted something to go along with it ... a salad didn't sound appetizing, so I thought I would try this veggie mix as a type of coleslaw (needed to be eaten, anyway) ... and, boy, did it turn out delightfully tasty!!!!!!!
Here's what I added together in a small bowl:
little over 1 cup of veggie mix
4 thick slices of cucumber, chopped
freshly ground black pepper, to taste
ground dry garlic, to taste
about 3-4 TBS ranch dressing
And, this is what it looked like after mixing together ...

Even if you don't have a Trader Joe's near your home (ours just opened within the last 6 mo. or so), take some of the veggies listed above, chop in a food processor and give this yummy coleslaw alternative a try ... then let me know what you think
