Healthy Snacks
I was reading through my newest 'Everyday with Rachael Ray' magazine (April 2011) and found a wonderful article called '103 Healthy Snacks' ... so
many great ideas ... if you can, try to find a copy of the mag so you can have all 103 snack recipes at your fingertips!! S
o, here's a list of a few of my favorites ... and no, I haven't had time to try all these out, but these ideas are those that I'm gonna definitely keep handy ... and I think several are even kid-friendly

If you're craving something salty, try this:
-- Crumble feta cheese over chilled watermelon cubes and sprinkle with finely chopped fresh mint
-- Smoked Turkey Pinwheels: spread a layer of softened cream cheese on sliced smoked turkey breast and top with thinly sliced tomato ... roll up and cut into 1-inch pieces
-- Top a whole wheat tortilla with dried cherries and smoked gouda cheese ... microwave till hot and melty

If you're craving something crunchy, try this:
-- Ants on a log: here's a grown-up version - stuff celery sticks with cashew butter (almond or peanut butter works fine too) and top with dried currants. And of course, for the kiddies: stuff celery sticks with peanut butter and top with raisins
-- Ranch-style popcorn: spritz air-popped popcorn with olive oil and dust with buttermilk powder, celery salt and chopped fresh dill (though, I imagine dry Ranch dressing mix would work great too)
-- Chickpea Poppers: Thoroughly dry canned chickpeas. Spritz with olive oil, season with dried oregano and garlic salt ... roast @ 400 degrees until crisp

If you're craving something sweet, try this:
-- Whip up some pudding: Blend equal amounts fresh raspberries and silken tofu. Add vanilla and honey to taste. Top with more berries, of course.
-- Peanut Butter & Coconut Bars: combine puffed whole grain cereal with just enough peanut butter and marshmallow cream to hold it together. Stir in shredded coconut and dried blueberries. Press into a pan, chill and cut into bite-size portions.
-- Virgin Tropical Treat: In a blender, combine frozen peaches, unsweetened coconut milk and honey. Sprinkle with chopped salted macadamia nuts and enjoy with a spoon =)

If you're craving something creamy, try this:
-- Give rich, addictive southern pimiento cheese a makeover: combine equal amounts shredded cheddar and low-fat cottage cheese, then fold in chopped pimientos. Spread on thinly sliced whole wheat bread.
-- Microwave a small sweet potato, split it open and mash a little OJ into it. Eat right out of the jacket =)
-- Combine low-fat ricotta cheese and plain yogurt. Stir in chopped kirby cucumbers and fresh basil. Eat with a spoon.

If you're craving super-foods, try this:
-- Green Deviled Eggs: Replace mayo with greek yogurt to make deviled eggs. Fold a handful of finely chopped watercress and a pinch of Old Bay Seasoning into the yolks.
-- Stir chopped cherries into low-fat cream cheese and smear on shredded-wheat crackers. Top with walnuts.
-- Easy Blueberry Compote: Toss blueberries with olive oil and cinnamon and pan-fry until they're on the verge of bursting, then gobble up when warm.
-- Spinach-Miso dip: Thaw box of frozen spinach and squeeze dry. Stir in enough yogurt to make a dip and season with powdered miso soup mix.
