Low carb and gluten free eaters, rejoice ... this recipe comes to me courtesy of a blog that I receive email updates from, Living the Low Carb Lifestyle ... and I must say, this flour-less cake looks absolutely amazing ... makes my mouth water just looking at the photo.  You can bet that when grocery-shopping day comes around this weekend, I'm gonna get an extra carton of eggs and try this recipe out!!  Yumminess =)

 

Flour-less Chocolate Cake:

Ingredients:

  • 6 large eggs, room temperature
  • 12 ounces dark chocolate
  • 1.5 cups sweetener
  • 1.5 sticks butter

 

Preparation:

-- Preheat your oven to 325, and grease and dust a 9″ springform pan with cocoa powder.

-- In a bowl or stand mixer, add your room temp eggs and sweetener. Beat on high for 8 minutes or so, or until super fluffy and thick and pale yellow in color.

-- While the eggs are doing their thing, melt your chocolate and butter in the microwave. Start with it going for a minute, stir, and melt in 30 second intervals until just melted. Mix, and set aside and wait for your eggs.

-- When your eggs are done, pour in your chocolate mixture. FOLD them together until dark brown in color. This will take a few minutes since the eggs are so fluffy. Once combined, pour into your springform pan.

-- Bake for about 60 minutes or until a cake tester/toothpick comes out clean (or fudgy, but not wet). The original recipe I had for this said to bake for 90 minutes, but mine was done MUCH faster – I checked at an hour and it was completely done. Depending on your oven, it may take more or less time, so you may want to check your cake at 45 minutes just to be safe.

-- Cool, and place into the fridge. Top with whipped cream and berries!

Lemon Berry Freeze

Here's a yummy low-carb, low-sugar, good-for-you treat for a hot spring (as has been the case here in SC recently) or summer day ... Enjoy!!

 

Lemon Berry Freeze:

Ingredients:

2 c. fresh blueberries OR 2 c. frozen blueberries (could also use other berries, if you don't mind the seeds =])

2 tsp. lemon juice

1/4 c. water

Splenda or Stevia, to taste

 

Preparation:

-- Puree all ingredients in blender or food processor

-- Transfer to 2 small serving dishes

-- Cover and freeze for 3-4 hours

-- Top with a small spoonful of whipped cream to serve

Coleslaw Alternative

I just LOVE Trader Joe's ... think I find something new and 'good-for-you' every time I shop there for groceries.  Most recently, I found a lovely 8-veggie mix (broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish & celery) all chopped and ready for me to add to whatever dish I desired.

A few days later, decided to try it in my chili instead of corn-bread ... I added about 1 cup (which, afterwards, I felt was too much ... next time will do maybe 1/2 cup) and it was actually pretty yummy.  Another couple days after that experienment, I sauteed a couple handfuls with my leftover chinese take-out ... again, delish!!!  Then, this past Sunday, I made myself a veggie burger for lunch and wanted something to go along with it ... a salad didn't sound appetizing, so I thought I would try this veggie mix as a type of coleslaw (needed to be eaten, anyway) ... and, boy, did it turn out delightfully tasty!!!!!!!

Here's what I added together in a small bowl:

little over 1 cup of veggie mix

4 thick slices of cucumber, chopped

freshly ground black pepper, to taste

ground dry garlic, to taste

about 3-4 TBS ranch dressing

And, this is what it looked like after mixing together ...

Even if you don't have a Trader Joe's near your home (ours just opened within the last 6 mo. or so), take some of the veggies listed above, chop in a food processor and give this yummy coleslaw alternative a try ... then let me know what you think Smile

Love this slideshow I found on parenting.com ... it outlines the top 10 superfoods for kids (and, I think for us adults, too!!) ... then, at the end of each blurb about each food, there are serving suggestions geared especially towards those special little people who tend to be picky eaters ... yes, I too vowed that my kids would never, ever be picky about what they eat ...

Well, turns out my kids are more normal than I thought ... they definitely have their favorite foods/meals and anything outside that is not edible, in their opinion!!!  Drives me crazy sometimes, but I still love my munchkins Smile ... and I am always looking for ways to get healthy stuff into their favorites without suspicion.

Breakfast Shake

Breakfast is the most important meal of the day ... but, when you're working on changing your diet, it can be the most challenging ... at least I think so!!!  So many of my favorite breakfast foods (pancakes, waffles, bagels, you get the idea) are heavily carb laden and not so good for me (here's why).  Even whole grain versions I have to be careful of ... it all counts as carbs.

Soooooo ... I'm always looking for yummy breakfast ideas that are carb-reducer friendly, but appetizing at the same time.  Here's one of my favorites ... I love this one 'cause it's quick, easy and doesn't use any of my 4 daily carb servings right away in day ... the sky is the limit when it comes to ingredients ... my fav is Strawberry Banana =)  Oh, and my kids LOVE drinking this shake too ... which is awesome, 'cause as you'll see, it doesn't contain ANY sugar (another bonus).  Enjoy Smile


Breakfast Shake:

Ingredients:

1 1/2 cups fruit   (frozen is best, but can use 1/2 frozen, 1/2 fresh)

1/2 cup milk   (skim if you're watching fat, 2% if you're watching carbs)

1/2 cup plain or vanilla yogurt   (I love Trader Joe's organic vanilla)

Vanilla extract to taste

Ground cinnamon, if desired

1 TBS cool whip, if desired

 

 

 

Preparation:

-- Combine all ingredients in blender and blend til smooth

-- Top with 1 TBS. of cool whip and dash of cinnamon, if desired

-- Then sip away Wink

** other additions you might consider: probiotic powder, fiber powder (taste-less, color-less type), flaxseed oil, protein powder, etc. **
